Today, for Blogmas day 16 I thought I would share with you a fantastic and very easy red onion topped bread recipe that looks like you have made way more effort than you actually have.  And whats not to love about that? I cook this as a side if we have friends over for dinner, or I will make it for our dinner and serve it with a Tapas spread. Sound good? Then lets get started. 

Firstly, I will come clean.  I use a bread mix packet. Ok, so this may be cheating, but this is what works for me and frankly I havent got the time to be messing about with yeast and waiting for hours.  I have a toddler. And you never see a toddler wailing in Nigellas kitchen when is tea going to be ready.  So a packet mix it is.  I actually use the Aldi bread mix packet (you could use any bread mix you like), but I have to say the Aldi one cooks really well and is very tasty too!  


You will also need: 

lukewarm water (follow the amount on your bread mix packet)
15g butter
olive oil
1 red onion sliced
1 tbsp of sherry vinegar or red wine vinegar
1 tsp clear honey
1 chopped garlic clove
a small handful of Rosemary leaves
sea salt

Firstly make your bread mix up to the packet instructions.  Usually you have to mix in the water, knead and then leave to rise. 

Instead of leaving to rise in the bowl, press the dough out into a baking tray that is lined with greaseproof paper and brushed with a little olive oil. Then, cover with cling-film which has also been brushed with olive oil and allow to rise to the specified time on the packet (normally about an hour).  


About ten minutes before the time is up, press dimples into the bread and push in the chopped garlic and rosemary leaves into the dimples. (Pushing the ingredients into the dimples means the dough will then rise around it). 

Leave for about ten minutes and then cook in a pre-heated oven (200C) for about 20 minutes (again, it depends on the bread mix you use).  

Whilst the bread is cooking, heat a frying pan and melt 1tsp of the oil and the butter.  Add the red onion and cook on a low heat for 15 minutes. Then, add the vinegar and honey and continue to cook for around another 5 minutes.  Remove from the heat.  


You want to take the bread out about 10 minutes before it is cooked and then top with the onion mixture and a sprinkle of sea salt.  


Cook for another 10 minutes until golden. 

And ta-dah! A delicious red onion bread that is delicious.  


Can I write a recipe without saying ta-dah at the end.  No.  No, I cannot.
