Today, for Blogmas day 16 I thought I would share with you a fantastic and very easy red onion topped bread recipe that looks like you have made way more effort than you actually have.  And whats not to love about that? I cook this as a side if we have friends over for dinner, or I will make it for our dinner and serve it with a Tapas spread. Sound good? Then lets get started. 

Firstly, I will come clean.  I use a bread mix packet. Ok, so this may be cheating, but this is what works for me and frankly I havent got the time to be messing about with yeast and waiting for hours.  I have a toddler. And you never see a toddler wailing in Nigellas kitchen when is tea going to be ready.  So a packet mix it is.  I actually use the Aldi bread mix packet (you could use any bread mix you like), but I have to say the Aldi one cooks really well and is very tasty too!  


You will also need: 

lukewarm water (follow the amount on your bread mix packet)
15g butter
olive oil
1 red onion sliced
1 tbsp of sherry vinegar or red wine vinegar
1 tsp clear honey
1 chopped garlic clove
a small handful of Rosemary leaves
sea salt

Firstly make your bread mix up to the packet instructions.  Usually you have to mix in the water, knead and then leave to rise. 

Instead of leaving to rise in the bowl, press the dough out into a baking tray that is lined with greaseproof paper and brushed with a little olive oil. Then, cover with cling-film which has also been brushed with olive oil and allow to rise to the specified time on the packet (normally about an hour).  


About ten minutes before the time is up, press dimples into the bread and push in the chopped garlic and rosemary leaves into the dimples. (Pushing the ingredients into the dimples means the dough will then rise around it). 

Leave for about ten minutes and then cook in a pre-heated oven (200C) for about 20 minutes (again, it depends on the bread mix you use).  

Whilst the bread is cooking, heat a frying pan and melt 1tsp of the oil and the butter.  Add the red onion and cook on a low heat for 15 minutes. Then, add the vinegar and honey and continue to cook for around another 5 minutes.  Remove from the heat.  


You want to take the bread out about 10 minutes before it is cooked and then top with the onion mixture and a sprinkle of sea salt.  


Cook for another 10 minutes until golden. 

And ta-dah! A delicious red onion bread that is delicious.  


Can I write a recipe without saying ta-dah at the end.  No.  No, I cannot.

Are you counting down to Christmas? Not long to go now!! Christmas day really holds so much anticipation and excitement for us all, but sometimes I think by anticipating an event so much we can miss the moments that are happening right now, right under our noses. 

I thought of this whilst training for my half marathon in October.  I collapsed on the sofa one night and was telling my husband how nervous and stressed I was.  I explained that if I could just get the half marathon out of the way then I would be able to relax and I wouldnt feel so worried.  A few days after I had completed the half-marathon I sat on the sofa once again and told my husband how if I could just get something else done that was on my mind then I wouldnt feel so stressed.  It wasnt until he reminded me that actually we had already had a very similar conversation, that I realised I spend alot of my time unknowingly wishing time away. That I anticipate future moments and I always anticipate a calmer and less stressed me, when in actual fact, I am always worrying about something or another. 

I excitedly anticipate nights out.  I daydream of having more money and becoming an international blogging sensation (hey, you gotta have a dream).  And dont we all daydream and think if only we had a bigger house/more money/a smaller waist/more children/ insert wishful thinking here, our lives would be perfect and we would be happier. But I bet if I gave you all of those things right now, given a couple of hours you would have a new list of things to anticipate, wish for and worry about.  

I am certainly not saying that anticipation and looking forward is a bad thing.  I just think sometimes we get caught up in that anticipation and we sometimes lose the enjoyment of the moment we are actually in.  Sometimes it isnt until time has passed that we look back and realise how wonderful that moment actually was. 

For some reason now Im a mum, I have this realisation that floats about in the back of my brain that life is so so precious.  Im afraid I dont have all the answers (obviously), and this realisation to enjoy the moment is sometimes only fleeting.  I find I cant keep hold of it.  One minute I have the thought of how wonderful this life is and just being present in the moment, and then the next Im grumpy and wishing to be tucked up in bed with my pjs on. 

As I said, I do not have the answers.  But I am trying to find that balance of anticipation and being present.  This moment right here right now, is just as important as the moment that I am waiting for. And today, the 15th December is just as important as the 25th December (albeit with less presents), and today I am going to do my very best to enjoy it.

My calendar seems to be very packed with Christmas catch-ups, drinks and general festivities at the moment, and with blogging daily as well, my days are just flying by.  This week I caught up with two of my lovely friends for food, drinks, and as always when we catch up, lots of gossip.  As Mr.Bee is away on business in America, my very kind in-laws came and baby-sat Baba for me.  I left the house at 7.15pm and told them I wouldnt be very long.  Before I knew it was 11.30pm and was apologising to them for being so late!!! Time just flies when Im with these two and there just always seems so much to talk about, and obviously it takes times to out the world to rights!!!!

I wore this gorgeous maroon dress that I picked up from Topshop last week.   I didnt used to like body-con dresses, but I tried this on and felt really comfortable in it (its very stretchy). You can pick the dress up from the Topshop website here and for £24 I think this is a really good buy.  You could dress it up with heels or dress it down with boots or flats and either go bare legged or put on tights. The length is great and doesnt make you look like youre short as some lengths of dresses can. I am also loving this shade of maroon at the moment too and it feels very festive! 


I am now over the half way point for Blogmas 2014, and I have to say I am finding blogging daily to be quite hard at times!! I take my hat off to those that do it continually! I also feel overwhelmed by the lovely support and comments that the blogging community and readers have given me during Blogmas, it means alot to me, so thank you.  And I hope you will join me tomorrow for a tanning special on Blogmas day 14!
